1 medium onion, chopped
Olive oil
1 large carrot
50 mussels, cleaned and washed
1 large potato, diced
2 medium tomatoes, skinned and diced or _ can of diced tomato
1 cup of water or white wine
2-3 cloves garlic, crushed
1 teaspoon sugar ( if needed)
salt and pepper
Parsley, chooped
Sauté onion in olive oil for a few minutes until gets golden colour.
Add carrots and sauté for 5 minutes.
Add well-drained mussels, potatoes, tomatoes, water or wine, garlic, sugar, salt and pepper. Cook over medium heat for 30 minutes. Continue cookjing for another 125 minutes on very low heat until the water is absorbed by the vegetables.
Add chopped parsley before serving.
