1 tablespoon butter / olive oil
1 medium onion, grated or finely chooped
4 medium tomatoes, skinned and diced
4 pepperones, chopped
salt and pepper
4-5 eggs
Heat the butter / olive oil in a pan and sauté onion until gets golden colour.
Add chopped pepperones and sauté for a few more minutes.
Add tomates and cook until they are tender and ooze liquid.
Beat the eggs in a bowl with salt and pepper.
Add the eggs gradually into the tomato and pepperone mixture. Continue stirring until the egg whites are done.
