4 cloves garlic (crushed)
3 spring onions, (thinly sliced on the diagonal)
1 large tomato (peeled and diced)
1 tablespoon tomato pureé or paste
- glass vegetable oil
1 small piece of fresh root ginger (peeled and chopped)
1 teaspoon pepper
- teaspoon Tabasco
1 table spoon white wine
1 tablespoon soy sauce
salt and pepper
Heat the oil in a deep pan. Stir fry the ginger and garlic for a few seconds.
Add the shripms and stir fry for 2 minutes.
Add the tomato pureé, pepper and tabasco and stir fry for a few more seconds.
Add the diced tomato, wine ans soy sauce. Stir fry for 2-3 minutes.
Add the spring onion, salt and pepper to taste.
Serve hot.
